This is a simple recipe for side dish with crunchy French beans flavored with wholegrain mustard, garlic and lemon that takes less than 10 minutes to make. It happens to be vegan, too.

I’ve tried recipes that cook the French beans as a whole, they LOOK great but the flavors are superficial.
The solution here is to cut the French beans into equal-sized pieces. More surface area exposed to the dressing= more flavor absorbed. If you have been following my blog, you will know that I’m quite obsessed with flavors being absorbed thoroughly.
Boil the French beans in salted water (again, for better flavor), drain and mix in the simple garlic mustard dressing which you can prepare while the beans are boiling.
ingredients for the mustard dressing
- wholegrain mustard- gives you a delicious nutty flavor
- minced garlic- to complement the mustard
- chili flakes for that spicy kick
- lemon juice and zest for the tang
- extra virgin olive oil that brings it all together
Mix all ingredients for the dressing and add to the drained beans while still warm. Done!
