This is a simple recipe for a green bean side dish flavored with wholegrain mustard, garlic and lemon that takes less than 10 minutes to make. It happens to be vegan, too.

I’ve tried recipes that cook green beans as a whole, they LOOK great but the flavors are superficial.
The solution here is to cut the green beans into equal-sized pieces. More surface area exposed to the dressing= more flavor absorbed. If you have been following my blog, you will know that I’m quite obsessed with flavors being absorbed thoroughly. That’s the reason I thinly slice chicken breasts before seasoning and baking in the recipe for baked chicken breasts.
There are 3 easy ways to cook green beans:
BOIL: Place chopped green beans in salted water (again, for better flavor) and set it to boil in a covered pan. As soon as it starts boiling, remove it from heat and drain.
STEAM: Toss the chopped green beans with a little salt and steam them in a steamer for 5 minutes.
SAUTE: Saute chopped beans with salt in 1/2 a teaspoon of oil on medium heat for about 5 minutes, sprinkle 2 tablespoons of water, cover and cook for 5 to 8 more minutes until done.
Prepare the simple garlic mustard dressing while the beans are cooking and toss with the cooked beans.
Mustard Dressing for green beans
Ingredients
- wholegrain mustard- gives you a delicious nutty flavor and interesting texture.
- minced garlic- to complement the mustard
- chili flakes for that spicy kick
- lemon juice and zest for the tang
- extra virgin olive oil that brings it all together
A quick tip: Add more olive oil and honey to this no-sugar mustard dressing and use it on your favorite salads!
Mix all ingredients for the dressing and add to the cooked beans while still warm. Done!
Let it sit for 5 to 10 minutes and serve immediately. So HEALTHY, so TASTY!

Add-ins
This mustard beans with garlic is a basic recipe. It can be customized to add your favorite flavors:
- Roasted and slivered almonds
- Toasted sesame seeds
- Chopped fresh parsley, oregano or basil
- Sliced and sauteed shallots.
- Crushed spices like peppercorns, cumin or coriander seeds.
