Yogurt and yellow pepper in addition to mustard give lots of flavors and body to the sauce. I use yogurt as a low-fat alternative to mayo and sour cream in recipes like potato salad with raisins and high protein pasta salad.

You can do one of these things to keep the chicken moist and juicy:

  • Use chicken pieces with bones, skin and fat.
  • Use a lot of fat like butter and cream for cooking the chicken.
  • Use a unique marinade and bake the chicken. (as in baked pudina chicken)
  • Mince the chicken and make chicken mince kebabs or chicken kofta curry.
  • Cook juicy vegetables like bell peppers with the chicken.

This dijon mustard chicken recipe uses one of the healthiest options, using pepper, mustard, lemon and yogurt for the creamy dijon sauce. Each of the above-mentioned ingredients helps in tenderizing chicken as well as provides flavor.

I’ve used boneless skinless chicken breasts here. Boneless legs or thighs chopped into bite-sized chunks can also be used.

How to cook lemon yogurt chicken- step by step

Saute chicken

Chop the chicken breast into 2-inch pieces and season with salt, pepper and lemon juice. Heat oil, stir in the chicken pieces and saute for 10 minutes or until all the pieces turn opaque but not fully cooked.

Make lemon yogurt sauce

Blend all the ingredients for the lemon dijon sauce except the Greek yogurt into a smooth puree.

Remove the chicken pieces and heat 1 tablespoon of butter in the same pan. Add the blended pepper-mustard puree and simmer for 15 minutes on low heat.

Add the chicken pieces and yogurt and let it simmer for another 10 minutes.

Garnish with chopped coriander and serve right away.

Tips to make yogurt lemon chicken

Make this recipe your own by adding your favorite vegetables or herbs. Remember to add a bit more of the seasoning (salt, pepper, chilli, mustard and lime juice) when you add veggies.

  1. Roast the bell peppers before blending (as in red chili pesto recipe or roasted pumpkin soup recipe). This is an easy way to intensify the flavors.
  2. Add 1/2 cup of boiled peas or potatoes to add more flavor and nutrition.
  3. Add chopped spinach to the sauce when you add chicken and yogurt.
  4. Saute 1/2 cup of halved brussel sprouts with salt and pepper in the same pan after sauteing the chicken. Add to the sauce along with chicken.

Ingredients
  

  • 500 grams boneless chicken breast
  • 1 yellow bell pepper
  • 1 big white onion or 2 small ones
  • 3 garlic cloves
  • 1 green chili
  • 2 teaspoons Dijon mustard
  • 1 tablespoon lemon juice
  • zest of half lemon
  • 2 teaspoons salt
  • a dash of pepper
  • 1 tablespoon cooking oil
  • 1 tablespoon butter
  • 2 tablespoons yogurt
  • 1/4 cup coriander leaves chopped

Instructions
 

  • Chop the chicken breast into 2-inch pieces and season with 1/2 teaspoon salt, pepper, and 1 teaspoon lemon juice. Leave it to marinate until you get the sauce ready.
  • Roughly chop the onions, garlic, yellow pepper, and chili pepper. Place them in a food processor or blender jar along with Dijon mustard, lemon zest and rest of the salt and lemon juice. Blend until you get a smooth, bright yellow puree.
  • Heat oil in a frying pan and add the marinated chicken pieces. Saute on medium heat, stirring occasionally, for 5 to 10 minutes until all the chicken pieces turn opaque.
  • Remove the chicken pieces and melt butter in the same pan. Stir in the dijon sauce and simmer over low heat for 15 minutes or until the sauce begins to thicken.
  • Add the chicken pieces and yogurt and cook for another 10 minutes on low heat, until the sauce reaches the desired consistency. Garnish with coriander and serve.

Notes

  • If you have the time and energy, you can roast the bell pepper before blending. It gives an interesting twist to the flavor of the sauce.
  • This creamy lemon chicken can be served with pasta or flatbread: add 1 teaspoon of Italian seasoning to the sauce when it is simmering.
