These spicy deviled eggs satisfy your craving for the egg appetizer and also your love for chicken. Boiled eggs are stuffed with minced chicken that is cooked with Indian spices (also called keema chicken). A healthy twist to the classic deviled eggs, this keema chicken recipe with eggs is a fun take on chicken keema, an Indian minced chicken recipe.
For making your own chicken mince, chop the chicken breast into chunks and mince using a food processor. If you don't have one, use a sharp knife to mince the chicken.
Hard boil the eggs, peel them and slice into halves lengthwise. Scoop out the yolks carefully with a small spoon. Mash well and Keep aside.
Heat the oil in a pan and saute the onions for 5 min until it turns translucent, then add ginger and garlic. After 5 min, add tomatoes and salt. Once the tomatoes turn mushy, add minced chicken, chilli powder, pepper, salt and yogurt. Mix well and keep it closed for 10 min or until the chicken is cooked and the gravy turns thick.
Turn off the heat, add the yolks and coriander leaves. Mix until all ingredients are well combined.
Place the egg whites with the cut side up on a serving platter. Spoon the chicken mixture into each egg white and garnish with spring onions.

Tips to make the best hard-boiled eggs and peel them easily:
Place eggs in a deep pot and add water until it covers the eggs completely.
Bring the water to a boil. Once it starts boiling, turn off the flame and close with a lid.
Prepare a pot of ice water.
Open the lid after 15 minutes and plunge the eggs into ice water.
Peel the eggs after 5 minutes.
This way you get perfectly boiled eggs that are also easy to peel.
Leftovers:You will be left with some extra filling you can use for sandwiches or wraps which taste great! The filling keeps well in the fridge for 2 to 3 days (if you've used fresh eggs) or 1 month in the freezer.You can also use leftover roast chicken for this recipe. Mince the chicken and add at the end of step 2, just before turning off the heat. Reduce the spices since the roast chicken may already have some flavor.Additions: For more flavor, you can add 1/2 teaspoon coriander powder and 1/4 teaspoon garam masala while cooking chicken mince.Substitutions:
Chicken can be replaced with minced prawns or fish.
For vegetarian options, replace the chicken with minced firm tofu or vegetables of your choice (grated carrots, finely chopped beans, cauliflower, peas, potatoes).
