This keto-friendly Thai green curry with chicken can be made easily at home with homemade green curry paste and a few simple ingredients.
Lemon zest
Seasoned chicken
Coconut oil
Bell pepper
Thai basil
Coconut milk
Eggplant
Green curry paste

Make the green curry paste. Once you learn how to make this paste, cooking Thai curries will be a breeze.
Heat coconut oil in a pot and sauté the green curry paste for 5 minutes on low flame.
Dice boneless chicken into cubes. Season them with salt and pepper. Add to the sauteed curry paste. Stir for about 5 minutes.
Add diced eggplant, chicken stock, coconut milk, fish sauce and lime zest. Bring it to a boil on high flame.
