INGREDIENTS 

red rice

lime leaves

lemongrass

galangal

veggies

onions

garlic

coriander leaves

chillies

Boil water with lemongrass and lime leaves

Add red rice and cook until soft

Drain in a colander. Remove the lemongrass & lime leaves

Spread the rice on a large plate and let it cool.

Stir-fry the onions, chillies, galangal and garlic in oil.

Stir-fry the vegetables

Add boiled peas, cooled red rice and soy sauce 

Remove from heat and garnish with coriander leaves

 Serve with  lemon wedges
