HOW TO COOK RED RICE: Boil water with lemongrass and lime leaves
Add red rice to boiling water. Bring it to a boil again and simmer until soft to the touch.
Drain in a colander. Remove the lemongrass & lime leaves. Transfer rice back to the pot and keep it closed for 10 minutes.
Spread the rice on a large plate and let it cool.
HOW TO STIR-FRY RED RICE AND VEGETABLES: Stir-fry the onions, chillies, galangal and garlic in oil.
Stir-fry the carrots and bell peppers.
Add boiled peas. Optionally, add beaten eggs by creating space in the middle of the pan. Scramble the eggs until almost done. Add cooled red rice and soy sauce.
Stir fry until well incorporated. Remove from heat and garnish with coriander leaves
