Chicken keema is an easy curry made with minced chicken breasts (or thighs).
Do you think chicken breasts turn out dry and unappetizing when cooked? This chicken keema curry with soft and juicy chicken mince will change your mind forever!
Chop the chicken into small chunks. Place them in the food processor and process until minced. There you go!
Step 1: Mince the chicken
Add chili powder, coriander powder, turmeric, garam masala, salt and yogurt to minced chicken.
Step 2: Season the chicken
Mix well and allow the chicken to marinate for about 10 to 15 minutes while you prepare the rest of the ingredients.
Blend onions, garlic, ginger and whole spices: cinnamon, cloves, cardamom, star anise, peppercorns, coriander and cumin seeds.
Step 3: Blend
Heat oil in a pan. Add a bay leaf and the onion-spice paste. Saute until the paste turns brown. Add finely chopped tomatoes and saute.
Step 4: Make the Curry
Once the tomatoes turn mushy, add the marinated chicken. Saute until the color and texture of the chicken changes.
Blend cashews with water to make a paste. Add the cashew paste and chopped mint leaves to the chicken. Mix and cook covered for 5 miuntes.
Open and check the consistency. If you want the curry to be thicker, increase the flame and cook until you’re satisfied! However, do not cook for more than 5 to 7 minutes.
