Tender pieces of chicken slow cooked in a rich silky-smooth gravy full of aromatic spices!
This recipe will help you make closest-to-authentic rogan josh with chicken, without having to hunt for specialty ingredients.
Marinate chicken with chili powder, coriander, turmeric, garam masala, dry ginger powder, fennel powder and salt.
Step 1: Marinate chicken
Soak saffron in some hot water. This soaked saffron along with the water used to soak is the secret ingredient that gives rogan josh its amazing bright red color.
Step 2: Soak saffron
Rouighly chop Kashmiri dry red chillies into halves. Soak them in hot water. Squeeze the chillies to separate the seeds.
Step 3: Make red chili paste
Pick out the chillies and strain the water to remove the seeds. Blend the chillies with water into a smooth paste. This is another ingredient that gives rogan josh its characteristic color.
Roughly chop shallots and saute them until well browned. Cool and blend into a smooth paste.
Step 4: Make shallot paste
Heat mustard oil until it smokes. Turn off the flame. Add cardamom, cinnamon, cloves, peppercorns and mace. Turn on the flame and stir.
When yoiu get a nice aroma from roasted spices, add the marinated chicken. Saute until the chicken turns opaque. Add yogurt (or hung curd) and stir for a couple of minutes.
Add water and stir. Bring it to a boil. Stir in the browned shallot paste and chilli paste made earlier. Mix and cover the pot with a lid.
Cook the curry on low flame until the chicken is cooked. Now add the soaked saffron with the water. Simmer for a couple of minutes more. Chicken rogan josh is ready to be served!
