Basil Tofu Stir fry

This Thai basil tofu stir fry is an easy and delicious dinner you can make on busy weeknights.

Eat it with plain boiled rice or transform it into basil tofu fried rice, noodles or lettuce wraps.

Wrap tofu blocks with a towel and place between 2 chopping boards. Place a heavy object on the top board.

Step 1: Press Tofu

After 15 minutes, take out the tofu and crumble with your hands or use a potato masher.

Step 2: Mash Tofu

Roughly chop chilies and garlic and crush using a mortar and pestle

Step 3: Make  Chili Garlic Paste

Add dark and light soy sauce, brown sugar, water and a pinch of salt in a bowl. Mix until the palm sugar dissolves.

Step 4: Make sauce

Stir fry the crushed garlic and chilies until you get a nice aroma. (Wish you could smell this!)

Step 5: Stir fry

Add the mashed tofu bits and stir fry until they change colour.

Add finely chopped onion and thinly sliced bell pepper. Stir fry on high flame.

Add the prepared stir fry sauce. Reduce the flame and cook until the sauce thickens.

Turn off the flame.  Garnish with Thai basil leaves.
