Kerala chicken curry, also called nadan chicken curry is a specialty of Kerala, one of the Southern Indian states.
Marinate chicken thighs with Kashmiri chili powder, garam masala, salt, pepper and lemon juice.
Sauté onions and curry leaves in coconut oil. Add minced ginger and garlic and sauté until it browns.
Blend grated coconut with fennel seeds and water. Add to the gravy along with garam masala.
Sauté dry chilies, pearl onions and curry leaves in coconut oil. Mix into the curry.
