These chicken kebabs can be easily made at home with minced chicken breasts or thighs, simple Indian spices, and a surprising secret ingredient.
These exotic chicken keema kebabs can be served as party appetizers. They are also easy enough to be eaten as starters (or even mains) for a cozy family dinner.
Place roughly chopped boneless chicken, chilies, ginger, garlic and egg in a food processor jar.
Step 1: Mince
Add chili powder, coriander powder, cumin, turmeric, garam masala, salt, pepper, oil and lime juice. Process until you get a coarse paste.
Heat oil in a wide saute pan. Add finely chopped onions and saute on medium heat until they are browned. Keep aside until they cool down.
Step 2: Saute onions
Add the sauteed and cooled onions to the minced chicken mixture. Mix in finely chopped coriander leaves (and mint leaves, optionally). Mix until well combined.
Take lime-sized balls of the mixture and shape them roughly into cylinders. So long as they're thin enough to be cooked through, you don't have to worry about perfect shape.
Step 3: Shape into kebabs
Brush your pan with oil and place the kebabs apart from each other. Fry the kebabs and keep flipping until all the sides are cooked.
Step 4: Pan-fry the kababs
Cook the chicken kebabs on medium flame and fry in batches. Do not overcrowd the pan. Do not cook each batch for more than 6 minutes.
