Dice 2 large cucumbers and thinly slice 2 onions. Add 1 teaspoon salt and toss.
Place the salted cucumbers and onions in a colander.
Dice 2 tomatoes and add.
If time permits, let the vegetables sit for about 5 to 10 minutes to drain out the moisture.
Transfer the veggies to a bowl. Add ¼ teaspoon red pepper flakes, ½ teaspoon black pepper, 1 teaspoon sumac, ¼ cup parsley, 2 teaspoons extra virgin olive oil and 2 teaspoons lemon juice.
