A vibrant red chimichurri made with roasted red peppers, garlic, herbs and spices. The trick is to blend garlic and peppers to create a creamy texture so you don't need much oil. Ready in minutes and delicious with chicken, fish, steak or vegetables. (Here's a recipe for basil chimichurri, if you don't have or don't want to roast peppers.)
Line a baking sheet pan with parchment paper. Place 2 red bell peppers (capsicum) and roast in the oven for 30 minutes.
Peel the charred peppers
Remove the roasted red peppers from the oven. Cover them with a large glass bowl.
After 10 minutes, peel the peppers. Remove the seeds, reserving the juices.
Roughly chop the peppers.
Prep the ingredients
Mince 4 cloves garlic and 1 red chili pepper.
Roughly chop ¼ cup Italian basil and ¼ cup parsley.
Blend
Place the chopped red peppers in a food processor or high speed blender.
Add all the other ingredients except the herbs: ½ teaspoon smoked paprika, ¾ teaspoon salt, ¼ teaspoon black pepper, 1 tablespoon lemon juiceand 3 tablespoons extra virgin olive oil.
Blend into an almost smooth sauce.
Now add the chopped herbs and pulse a few times until they are broken down, or blended to your satisfaction.
Serve red chimichurri with any protein of your choice.
Notes
Ensure that you finely dice or mince garlic before blending it. That's key to emulsifying the chimichurri (with less oil).
Are you a fan of roasted garlic? Use roasted garlic instead of the raw ones in the recipe. You'll get a smokier chimichurri!
If the chimichurri is too thick, add a splash of the juices you reserved from the roasted peppers.
