The perfect amount of spices, coconut and creamy texture make this chicken kofta curry one of the healthiest and yummiest recipes you would ever come across.

Mince boneless chicken breasts or you can buy minced chicken, if possible.
Blend together chopped chillies, ginger, garlic and coriander leaves and stems into a smooth green paste.
Add half of the blended green paste to the chicken mince along with salt, oats and onions
Mix well and shape the mixture into lime-sized balls. This recipe will yield 15 to 20 chicken koftas.
Heat oil in a deep pan. Roast the whole spices and almonds until you get a nice aroma.
Add thinly sliced onions to the almonds and saute. Roasted whole spices, almonds and onions is the secret to this recipe's amazing flavors!
The best is yet to come! Let the mixture cool. Blend it into a smooth paste. This is going to be the "healthy cream" for our kofta curry!
Heat oil in a deep pan and saute the bay leaf and onions until browned.
Add the remaining other half of the green herb paste from making the koftas. Saute for 3 to 5 minutes.
Chop the tomatoes and blend them into a smooth puree. Add the tomato puree to the sauteed onions and green paste.
Add the ground spices: chilli powder, coriander powder, turmeric powder and salt. Optionally, you can add garam masala, too. ;
Saute until oil separates from the mixture and everything comes together. Add water and set the flame to high.
Bring the gravy to a boil. A quick tip: You can blend the onions instead of finely chopping them for a smoother gravy.
Drop the prepared chicken koftas into the gravy. Cover the pan and simmer on medium heat for about 12 to 15 minutes.
Add the coconut almond paste to the simmering curry. Cook for 5 more minutes. Garnish with chopped coriander leaves.
Serve with rice, pulao, naan or roti and a vegetable side dish or salad.
