Saute spices, bay leaves and chilies in olive oil.
Step 1: Make Chicken Broth
Add chicken thighs, ginger, garlic, turmeric, salt, and water. Bring it to a boil and simmer until chicken is cooked.
Remove the chicken thighs from the broth. Separate the flesh from the bones and shred it. Discard the bones.
Step 2: Shred The Chicken
Pro tip: If you have the time, simmer the separated boned in the broth for about 20 minutes. Strain the broth and discard the spices.
Heat oil in a soup pot and saute onions and carrots. Add broth and bring it to a boil. Add shredded cabbage.
Step 3: Cook Vegetables
Blend coriander leaves, stems, cashews and lemon peel into a smooth paste with water. Add it to the soup.
Step 4: Make Coriander Paste
Make corn flour slurry with corn flour/cornstarch and water. Add it to the simmering soup.
Step 5: Add Corn Flour Slurry
Add the shredded chicken from step 2. Simmer for a couple of minutes only.
Step 6: Add Cooked Chicken
Turn off the flame. Top the soup with a sprinkling of coriander leaves and drizzle lemon juice.
