Marinate chicken with chili powder, salt and lemon juiice for about 10 minutes.

Roast curry leaves in a deep pan or wok. Roughly chop cashews and add. Stir for a couple of minutes.
Make curry leaf powder
Add whole spices: cumin seeds, coriander seeds and peppercorns. Dry roast on low flame until you get a nice aroma.
Cool the curry leaf spice mixture. Grind it into a powder. I recommend an almost smooth powder, but you can make it smooth if you want.
Heat oil in the same pan/ wok. Sauté finely chopped onions. Add grated ginger and garlic, and chopped chillies and stir.
Cook chicken
Once the onions start to brown, add the chicken pieces that have been marinating. Sauté until the chicken turns opaque.
Cover the chicken and cook for about 5 to 10 minutes until done. Add the ground curry leaf powder and stir until combined and the chicken is browned.
