Roast curry leaves in a deep pan or wok. Roughly chop cashews and add. Stir for a couple of minutes.

Add whole spices: cumin seeds, coriander seeds and peppercorns. Dry roast on low flame until you get a nice aroma.

Cool the curry leaf spice mixture. Grind it into a powder.  I recommend an almost smooth powder, but you can make it smooth if you want.

Heat oil in the same pan/ wok. Sauté finely chopped onions. Add grated ginger and garlic, and chopped chillies and stir.
