Mince chicken with garlic, egg and spices in a food processor.
Make chicken mince patties
Once the chicken is broken down into small pieces, add parmesan, lemon zest and fresh herbs. Pulse a few times until everything is combined.
Transfer the minced chicken mixture from the food processor to a large bowl. Add breadcrumbs and mix well.
Shape the chicken mince mixture into patties. Heat oil in a grill pan. Pan-fry the chicken patties for 2 to 3 minutes each side until golden brown.
Mix olive oil with salt, black pepper, cayenne pepper and dried rosemary. Add the seasoning to the diced potatoes and toss.
Roast potatoes
Spread the potatoes in a single layer on a sheet pan in a preheated oven. Roast the potatoes for 40 minutes, tossing them halfway through cooking.
