Quinoa Pasta Salad

This quinoa pasta salad with a delicious and light basil balsamic vinaigrette and feta is all you need on those hot summer days.

Rinse the quinoa and drain using a fine mesh strainer. Place the quinoa with stock in a microwave-safe bowl.

Step 1: Cook quinoa

Cover the bowl and microwave on high for 10 minutes. Remove from the microwave and give it a stir.

Close and microwave again for 10 minutes. Let it sit for 5 minutes. Open and stir. Fluffy quinoa is ready! Let it cool down.

Add sliced onion, cucumber, bell pepper, olives, almonds and cranberries. Don't forget crumbled feta cheese!

Step 2: Add-ins

Balsamic vinegar, olive oil, lemon juice, minced garlic, chilli flakes, Italian herbs, salt and pepper.

Step 3: Make Basil Balsamic Vinaigrette

Whisk all the ingredients in a jar until well combined. This is the "secret dressing" that gives so much of flavor to this Italian quinoa salad!

Drizzle half of the basil balsamic dressing on the quinoa and add-ins. Toss everything until well combined.

Drizzle the other half of the balsamic vinaigrette and stir again. This way, the dressing will be thoroughly absorbed by all the salad ingredients.
