Masala egg fry is an Indian-style egg fry recipe in which boiled eggs are fried with masala (a mix of delicious spices).
Egg masala fry is the easiest way to spice up boiled eggs. Once your boiled eggs are ready, this recipe takes only 10 minutes to make.
Place the eggs in water. Bring it to a boil. Turn off the flame and keep them covered for 15 minutes.
Step 1: Hard-boil eggs
Remove the eggs and immediately place them in ice bath for 5 to10 minutes. There you go, it's damn easy to peel them now!
Crush garlic cloves (with skin). Tear a few curry leaves. Heat oil in a pan and add cumin seeds. When they start sizzling, add garlic and curry leaves.
Step 2: Saute
Add ground spices: chili powder, coriander powder, ground cumin, garam masala, salt and pepper. Fry for a couple of minutes.
Step 3: Make the masala
Peel and halve the boiled eggs. Once you get the aroma of roasted spice masala, place the egg halves in the pan, facing down.
Step 4: Fry the eggs with masala
Gently stir the eggs and try to get most of the masala to stick to the eggs. Flip and repeat. Garnish with more roasted curry leaves.
