Easy Red Cabbage Soup

An easy red cabbage soup that tastes as amazing as it looks!

This creamy soup with pruple cabbage and potato does not use cream, yet it is hard to believe it even after you mop up the whole bowl of the delicious soup!

Dice garlic and onions. Heat oil in a soup pot and sauté them for a couple of minutes.

How To Make  Purple Cabbage Soup

Step 1: Sauté

Chop celery and dice potatoes. Add them to the pot with onions and garlic. Add a handful of almonds. Sauté for about 2 to 3 minutes.

Shred red cabbage, add to the pot and stir. Add vegetable or chicken stock. Bring it to a boil.

Step 2: Boil

Simmer until veggies are cooked. Let it cool and blend until smooth. (Or blend with an immersion blender.)

Step 3: Blend

Pour the blended mixture back to the pot. Add salt, pepper and water as required. Adjust to taste.

Step 4: Season

Simmer until the soup starts bubbling. Pour the hot soup into individual bowls. Now comes the best part

Dry roast sunflower seeds in a small pan until crisp and brown. Remove them and roast nigella seeds (black cumin).

Step 5: Toast

Whisk yogurt with lemon juice. Drizzle on the soup. (This is my version of sour cream!) Sprinkle sunflower and nigella seeds, and green onions.
