Saute bay leaf, cashews, onion, ginger and garlic in olive oil.
Step 1: Saute
Stir until the onions turn translucent. Chop cauliflower into small florets. You can add the stems, too. Add in the florets and stems. Stir for a couple of minutes.
Add water or stock and spices: chilli powder, coriander powder, turmeric powder and salt. Mix well and cover the pot. Bring it to a boil on high flame.
Step 2: Boil
Reduce the flame and simmer until the cauliflower is cooked. Remove the bay leaf and blend the contents into a smooth puree.
Step 3: Blend
Adjust water and seasoning as required. Serve in individual bowls with your favorite toppings like garlic croutons, roasted nuts, chilli flakes, coriander leaves, etc.
