Varutharacha chicken curry is one of the authentic Indian chicken curry recipes from the Southern state of Kerala.
Made with aromatic roasted spices and coconut, this easy kozhi varutha curry might soon become your next favorite curry.
Mix chicken with chili powder, coriander powder, turmeric and salt. Let it marinate while you prepare the gravy.
Step 1: Marinate
Heat oil in a pan. Add whole spices: cinnamon, cardamom, cloves, peppercorns, dry chilies, coriander, fennel and cumin seeds.
Step 2: Roast
Add diced onions and garlic. Saute until they are translucent. Add grated coconut and roast until the coconut and spices are well-browned.
Cool the coconut spice mixture. Add a little water and blend the mixture into a smooth paste. Keep it aside.
Step 3: Blend
Heat coconut oil in a deep pot. Add finely diced onions and saute until translucent. Add ginger-garlic paste and cook for a couple of minutes.
Step 4: Make Varutharacha Kozhi Curry
Add finely chopped tomatoes and saute until the tomatoes are cooked and turn mushy.
Add the marinated chicken to the onion tomato mixture. Stir the chicken on medium flame until they turn opaque.
Add water and cook covered. Bring it to a boil and simmer on medium-low flame until the chicken is cooked.
Add the roasted and blended coconut paste to the curry. Mix well to remove lumps and simmer until you get an irresistible aroma!
If the varutha kozhi curry is not thick enough, simmer until you get the desired consistency. Garnish the curry with coriander and curry leaves. Turn off the flame and serve.
