How To Make Beet Walnut Feta Salad

Step 1: Roast beetroot and garlic

Toss diced beetroot and unpeeled garlic cloves with the prepared seasoning. Spread them out on a baking tray.

Roast in the oven for 20 to 25 minutes until the beets are cooked and glistening with caramelisation.

Remove the beetroot and turn off the oven. Spread walnuts on the tray and place in the warm oven for 5 minutes.

Step 2: Toast walnuts

Peel the roasted garlic and mash them with a fork until smooth.

Step 3: Make roasted garlic dressing

Whisk together mashed garlic with chili flakes, dried basil, extra virgin olive oil, lemon juice, honey, salt and pepper.

Tear lettuce, chop parsley and slice onions. Add roasted beetroot chunks and toss with half the salad dressing.
