This corn mango salsa is a quick, no-cook recipe made with fresh mango, sweet corn, lime juice, and herbs. Naturally low in calories and packed with flavor, this mango salsa with corn is perfect as a taco topping or refreshing side dish.
You can either use fresh corn as is, or steam/boil/roast them. I prefer to steam 2 ears of corn for about 10 minutes to bring out the sweetness and make them more digestible.
Finely dice 1 red onion, ½ red bell pepper and 1 or 2 jalapeños.
Finely chop the cilantro and zest the lime.
Place all the chopped ingredients in a large bowl.
Mix ½ teaspoon salt into 1½ tablespoons lime juice. Add it to the ingredients in the bowl and toss until well combined.

Corn: If you don't happen to have fresh corn, frozen corn also works here. Again, it is better to steam for at least 5 minutes.Jalapeños: If you don't like heat, remove the seeds and veins before chopping.
