  • Corn: You can use in any form- fresh/steamed/roasted, whatever you prefer. I like to steam corn on the cob, which deepens its sweetness. If you don’t have fresh ears of corn, you can also use frozen corn. (That’s what I used today.)
  • Mangoes: The freshness and ripened stage of the mangoes decide the taste of the salsa, whether you want it very sweet, moderately sweet or slightly tangy. As in the mango tomato salsa, the beauty of this salsa recipe is that even a semi-ripe mango tastes delicious.
  • More vegetables/fruits: You can add bell peppers, avocados or pineapple
  • Other flavor makers: jalapenos, red onions and cilantro
  • Lime: Lime juice along with zest gives a burst of freshness

Ingredients
  

  • 2 ears of corn (or 2 cups of frozen corn)
  • 2 medium-sized mangoes (2 cups when diced)
  • 1 or 2 jalapeños
  • 1 red onion
  • ½ red bell pepper
  • ¼ cup cilantro
  • 2 teaspoons lime zest
  • tablespoons lime juice
  • ½ teaspoon salt

Instructions
 

  • Peel and finely dice 2 medium-sized mangoes.
  • You can either use fresh corn as is, or steam/boil/roast them. I prefer to steam 2 ears of corn for about 10 minutes to bring out the sweetness and make them more digestible.
  • Finely dice 1 red onion, ½ red bell pepper and 1 or 2 jalapeños.
  • Finely chop the cilantro and zest the lime.
  • Place all the chopped ingredients in a large bowl.
  • Mix ½ teaspoon salt into 1½ tablespoons lime juice. Add it to the ingredients in the bowl and toss until well combined.
  • Serve it with your favorite protein or taco bowls. (You can choose from the options in the post above.)

Corn: If you don’t happen to have fresh corn, frozen corn also works here. Again, it is better to steam for at least 5 minutes.
Jalapeños: If you don’t like heat, remove the seeds and veins before chopping.
