Instructions
Roast red peppers and garlic
Preheat the oven to 210
°
C/410
°
F.
Place
2 red bell peppers
and
2 cloves garlic
(with skin) on a sheet pan lined with parchment paper.
Spray olive oil. Wrap the garlic cloves in a small piece of aluminium foil.
Roast in the oven for 30 minutes, flipping the red peppers at the 15-minute mark.
Remove the baking tray from the oven and cover the peppers with a large bowl. This will make them easier to peel.
Open after 5 minutes. Let it cool.
Now the skin would come right off. Peel the peppers and discard the skin and seeds. Chop them roughly.
Peel the garlic cloves.
Blend
Crumble
150 grams (5.3 ounces) feta cheese
.
Reserve a tablespoon of crumbled feta for garnish.
Place the chopped red peppers, garlic and crumbled feta cheese in a food processor.
Add
½ tablespoon paprika
,
½ teaspoon cumin
,
¼ teaspoon cayenne pepper
and
1½ tablespoons lemon juice
.
Process until almost smooth. While the processor is still running, drizzle
1 tablespoon extra virgin olive oil
slowly.
Garnish
Transfer the contents to a serving bowl.
Garnish the paprika dip with
2 tablespoons chopped fresh parsley
and the reserved crumbled feta. (See notes below for more topping suggestions.)

If you don't have the time to roast bell peppers, feel free to use store-bought ones.
Feta paprika dip can be made more interesting with toppings like:
Toasted
sesame seeds
or any other seeds or nuts.
Chopped
Kalamata olives
or black olives.
Additional
fresh herbs
like basil or green onions.
Red
chili flakes
or freshly cracked
black pepper.
