Blend onions, garlic, ginger and all the spices together. This is a substitute for chana masala powder.

This simplified method is not only time-saving but also results in a more flavorful dish.

Heat oil in a kadai or deep pan. Saute the blended paste until it changes color and you get a pleasant aroma.

Blend chopped tomatoes into a smooth puree and add to the onion and spice paste.

Add chilli powder, coriander powder and turmeric powder. Saute on medium-low heat.

Step 4: Add spices

Soak and cook chickpeas or use canned ones. Reserve a handful of chickpeas and keep aside.

Step 5: Cook chickpeas

Add chickpeas with water to the onion tomato mixture. Mix and cook covered. Once it boils, simmer for 10 minutes.

Step 6: Add chickpeas

Blend the reserved chickpeas with water into a smooth paste. Add the paste to the curry.

Step 7: Blend

Simmer until you get the desired consistency.   Garnish with coriander leaves.
