Bagalabath is Indian yogurt rice made by mixing plain yogurt and rice and finished off with tadka (tempering).
Creamy comfort food that is ALSO healthy and loaded with nutrients. You can customize it by adding your favorite toppings like fruits and nuts.
Cook rice with more water than usual. For 1 cup of rice use 2¼ cups of water. This applies to pressure cooker, instant pot and rice cooker.
Step 1: Cook rice
Transfer the cooked rice to a deep bowl and mash while it is still hot. Use a ladle or potato masher.
Step 2: Mash rice
Boil a cup of milk and add it to the mashed rice. Add 1½ teaspoons of salt. Mash again until you get the desired creamy consistency.
Tadka is nothing but roasted spices and herbs. Heat oil and add mustard seeds. Once they pop, add chilies, ginger, curry leaves, cashews and raisins. Keep aside to cool.
Step 3: Curd rice tadka
Add yogurt. You can use either homemade curd or store bought yogurt. Mix and mash until you get a smooth texture without any lumps.
Step 4: Add curd
To the curd rice, add ½ cup each of pomegranate seeds, grated carrot, and grated apple. Add 2 tablespoons of chopped coriander leaves.
Step 5: Add mix-ins
Add the prepared tadka (roasted spices, aromatics and nuts) to the rest of the ingredients. Mix everything together.
Add more yogurt as required. If you're not serving right away, store in the fridge. Add more yogurt before serving.
