Keep all the ingredients ready: diced chicken, yogurt, mint and coriander leaves, mustard oil, lemon juice, chillies, ginger and spices.

Blend the herbs and spices, yogurt, lemon juice, ginger and green chillies until you get a smooth paste.

Step 1: Blend

Reserve and refrigerate ¼ cup of the blended paste to use as chutney for the kababs.

Add the remaining blended spice-herb paste to the chicken. Add mustard oil and mix well.

Step 2: Marinate

Refrigerate the marinated chicken. Marinate for a minimum of 30 minutes. (Marinating overnight yields the best results.)

Thread the marinated chicken onto skewers. Place on a baking tray lined with foil. Baste with a mix of melted butter and oil.

Step 3: Skewer

Roast the chicken skewers at 230°C/ 446°F for 10 minutes. Baste with oil. Broil for 8 minutes.

Step 4: Bake

Place the skewers on a greased pan and cook for 5 minutes. Keep basting with oil+ghee. Flip and baste. Cook for 4 to 5 more minutes.
