Boiled eggs are roasted with onions, tomatoes and simple spices to give you a mouth-watering egg roast.

Boil the eggs. Keep covered for about 12 minutes. Plunge them in ice water. This way you get perfect boiled eggs.

Step 1: Cook the eggs

Heat oil in a pan. Add thinly sliced onions. Saute until they turn translucent.

Step 2: Make the Gravy

Add finely chopped green chillies and curry leaves to the sauteed onions. Fry for a couple of minutes.

Add ginger garlic paste and saute for a couple of minutes more. You can also use minced ginger and garlic.

Finely chop tomatoes and add to the browned onion ginger garlic mixture. Saute on medium-low heat.

Stir in ground spices: chilli powder, coriander powder, turmeric powder, garam masala, and fennel powder.

Add water to the onion tomato spice mixture. Mix and cook covered. Once it comes to a boil, lower the heat and simmer for 10 minutes.

Once everything comes together as a gravy and you get the desired consistency, add the peeled and halved eggs.

Step 3: Add the Eggs

Stir gently without mashing the eggs. Garnish with curry leaves. Serve with steamed rice, appam, dosa, or roti.
