Step 1: Make mutton soup masala
Cool the spices and grind them using a spice blender. Blend until you get a smooth spice mix. You’ve just made an awesome mutton soup masala!
Sauté bay leaves and finely chopped onions in oil until translucent. Add ginger-garlic paste and sauté for a couple of minutes.
Step 2: Sauté
Add finely chopped tomatoes. Sauté until they are cooked to a mushy consistency. Now it is time to add the hero of the recipe: mutton legs.
Add mutton bones and sauté for a few minutes. Stir until the flesh on the bones change color and everything is well incorporated.
Add 1 cup of water first. Stir and add more. Sprinkle turmeric and the blended ‘mutton soup masala’. Mix well without any lumps.
Step 3: Add spices and water
Transfer the contents to a pressure cooker or instant pot. Cover and pressure cook. After the first whistle, reduce the flame and simmer for 45 minutes.
If using instant pot, choose pressure-cook mode and set the timing to 45 minutes. Wait for natural pressure release. Garnish with fresh coriander and mint leaves.
