Learn how to bake this easy pesto crusted salmon with a layer of pesto, topped with a layer of seasoned Panko crumbs.

All you need is salmon, breadcrumbs, pesto, chili powder, chili flakes, leon zest, parsley and oil.

Ingredients

Remove the skin and season the salmon fillets with a mixture of chili powder and salt. Drizzle oil.

Step 1: Season

Make pesto. Any pesto is fine. I prefer this spinach almond pesto with basil.

Step 2: Pesto

Place salmon on a lined baking tray. Spread about 2¼ teaspoons of pesto on each fillet.

Mix breadcrumbs, chili flakes, parsley, lemon zest, olive oil, salt and pepper in a small bowl.

Step 3:  Breadcrumb mixture

Evenly spread handfuls of the breadcrumb mixture on each fillet. The pesto helps the crumbs stick to the fillet.
