A creamy pumpkin soup with carrots, ginger and warming spices is all you need on a chilly night.
This easy carrot pumpkin soup recipe without cream combines delicate flavours of carrots, fresh pumpkin and spice from ginger.
Dice onions and garlic. Heat olive oil in a large pot. Saute the chopped onions and garlic.
Step 1: Saute
Peel the pumpkin and dice it into about 1-inch cubes. Dice the carrots into cubes of the same size. Add them to the pan.
Add the ground spices: Chili flakes, ground cinnamon, dried ginger powder, ground cloves, grated nutmeg and black pepper.
Saute the pumpkin and carrots with the spices for a few minutes. Add vegetable stock and fresh sprigs of thyme. Bring it to a boil.
Step 2: Boil
Reduce the heat and simmer until the vegetables are cooked. Remove the sprigs of thyme and blend the vegetables using an immersion blender.
Don't have a stick blender? You can let the vegetables cool down. Then blend using a regular blender. Blend the soup until smooth.
Step 3: Blend
Garnish with more thyme and lemon yogurt "cream". Use your favorite toppings like roasted pumpkin seeds, other seeds and nuts, or croutons.
