Veggie Chicken Salad

Make this creamy veggie chicken salad for a quick lunch/dinner. (Also ideal for picnic, potluck or even lunchbox.)

Season the chicken with chili powder, paprika, garlic powder, lemon juice and salt.

Step 1: Season the Chicken

Pan-fry the seasoned chicken breasts in oil. Chop them into bite-sized cubes.

Step 2: Fry the Chicken

Blend yogurt, mint leaves, chilli, garlic, almonds, lemon juice and pink salt in a food processor.

Step 3: Make  Salad Dressing

Thinly slice red and green peppers, cucumber, celery and green onions. Boil pasta and drain.

Step 4: Mix-ins

Drizzle half of the yogurt dressing and toss everything together. Add the remaining dressing and toss again. Garnish with green onions.
