My simple salting technique keeps cucumbers crisp (no mushy salads here!).
Secret no.1: Salting
Remove pulp and slice cucumbers. Add salt and toss. Place the cucumber slices in a colander and let them drain.
Heat sesame oil and add red pepper flakes. Turn off the heat and let it cool down.
Secret no.2: Quick chili oil
To the chili oil, add roasted sesame paste, rice vinegar, lemon juice, honey, soy sauce, salt and pepper. Whisk until combined.
Roasted sesame dressing
Transfer the drained cucumber slices to a large bowl. Add sliced carrots, roasted peanuts and chopped cilantro. Drizzle the roasted sesame dressing.
Assemble the salad
Toss everything together. Add more toppings of your choice: roasted cashews, almonds or sesame seeds.
