This delicious capsicum Rice is packed with nutrients, low in calories, and so easy to make with everyday ingredients.
Plus, I've got a couple of tricks to boost the flavor. (Rice is cooked in spiced water and added to yogurt-herb veggies.)
Soak rice for about 20 minutes. Boil water with salt and spices in a large pot.
Cook Rice
Drain the soaked rice and add to the boiling water along with chopped herbs. Cover the pot and simmer on low heat until the rice is cooked.
In a wok or pan, sauté onions, chilies, ginger-garlic paste and tomatoes. Add salt and ground spices and stir until the tomatoes are soft and mushy.
Stir-in capsicum, green peas, mint leaves and coriander leaves. Cook covered for a few minutes. Add yogurt and stir. Turn off the stove.
Add the cooked rice to the prepared capsicum masala. Toss until well combined.
