Sauté cashews, ginger, garlic, green chilies. onions and tomatoes in oil in a large pot.
Step 1: Sauté
Add grated coconut and saute all the ingredients until browned. Stir in chili powder, coriander, turmeric, garam masala and salt.
Let the coconut spice mixture cool down. Blend the mixture into a smooth paste.
Step 2: Blend coconut sauce
Sauté onions, carrots and bell peppers. Add pepper and salt. Let the vegetables cool down.
Step 3: Make spicy egg omelets
Beat eggs and add the vegetables and coriander leaves. Whisk and make thick, well-cooked omelets by flipping them.
Once they are cool enough to handle, chop up the omelets into squares. Keep them aside. They already look delicious, but exercise self control!
Heat oil in the pot. Sauté the blended coconut-onion-spice paste with bay leaf. Add water and cover the pot. Bring it to a boil.
Step 4: Make curry
Reduce the heat and add the chopped omelets. Garnish with coriander leaves.
