Whip up the seasoning
Chop the sweet potatoes and carrots into batons of equal size. Add the Mediterranean seasoning and toss until combined.
Oil a sheet pan. Spread out the seasoned vegetables in a single layer on the baking sheet. Roast for 15 minutes.
Roast the vegetables
After 15 minutes, toss the vegetables and return to the oven. Roast for 15 more minutes.
