It's healthy, it's fun, it's practically a celebration in a bowl! Get chopping, get simmering, and get ready to fall in love with veggies all over again.
Saute a bay leaf, diced onions, grated ginger and garlic in oil in a soup pot.
Step 1: Saute
Dice carrots and celery. Add to the pot and saute. Sprinkle Italian seasoning or dried basil, thyme and oregano.
Add chicken or vegetable broth to the vegetables. Mix well and cover the pot. Bring it to a boil on high heat.
Step 2: Boil
Scoop out 2 cups of the cooked vegetables. Cool and blend in a high speed blender or food processor.
Step 3: Blend
Add the blended soup back to the pot and simmer for 5 to 10 minutes. Turn off the flame.. Remove the bay leaf and discard.
Add a squeeze of lemon juice and ½ teaspoon black pepper. Add salt if required (the stock will have enough salt).
Brush a pan with olive oil. Fry a few fresh celery leaves until crisp. Serve the soup in bowls, garnished with fried celery leaves.
