This chicken tikka salad is low in calories, high in protein, and perfect for clean eating. This version is meal prep-friendly and naturally gluten-free.
Make tandoori marinade with yogurt, lemon juice, ginger, garlic and spices.
Make marinade
Dice the chicken into bite-sized pieces. Mix the chicken with the marinade. Let it marinate for about 30 minutes.
Marinate chicken
Thread the marinated chicken onto skewers. Toss onions and bell peppers with the leftover marinade. Thread them on separate skewers.
Bake the chicken and veggies
Place the skewers on a baking tray. Baste with ghee and bake in the oven for 10 minutes. Baste with ghe again and broil for 10 minutes.
