Add the first marinade to chicken: cayenne pepper, salt, ginger and garlic.
Step 1: Marinate
Mix well and punch the chicken chunks with a fork. Leave them to marinate for a minimum of 30 minutes.
Melt butter with minced garlic in a small saucepan. Cook on low heat until both butter and garlic are browned.
Step 2: Garlic parmesan sauce
Add olive oil, grated parmesan, garlic powder, paprika, salt, pepper and fresh thyme. Mix well and divide the garlic butter sauce into 2 portions.
Thread the chicken pieces onto wooden skewers (that were soaked in water). Place them on an oven grilling rack.
Step 3: Skewer
Baste the chicken skewers with the parmesan butter sauce. Bake for 10 minutes, flipping after 5 minutes. Baste again and broil for 5 minutes.
