Who says you need hours in the kitchen for big flavor? This recipe is a light, easy take on the classic prawn ghee roast.
This prawn roast recipe needs one pan and 30 minutes. It is clean, bold & packed with real ingredients.
Make the marinade with chili powder, coriander, turmeric, garam masala and salt. Marinate the prawns with half of the spice mix.
Marinate the prawns
Fry the prawns in a mixture of ghee and coconut oil. Cook only for a couple of minutes. Remove and keep aside.
Partially roast the prawns
In the same pan, sauté finely chopped onion and cashews. Stir on low flame until they start to brown.
Cook aromatics
Add curry leaves and minced garlic. Saute them on low heat until the whole mixture turns golden brown.
Add the remaining half of the spice mix and toss. Add one or two spoons of water to prevent the spices from burning.

Add the partially cooked prawns and stir on low flame. Once the prawns are cooked, remove from heat. Drizzle lemon juice, toss and serve!
