Boil baby potatoes with salt, garlic and dried Italian herbs.
Step 1: Boil
Boil the potatoes until they are fork-tender. Drain the potatoes and return them back to the pot. Keep them covered for 5 minutes.
Line a baking sheet with parchment paper. Transfer the potatoes to the sheet pan. Place them apart and smash using a fork.
Step 2: Smash
Melt butter in a small bowl. Add red chilli flakes, black pepper, salt and olive oil. Brush the butter mixture liberally on each of the potatoes.
Step 3: Season
Roast in a preheated oven for 25 to 30 minutes until the edges of the smashed potatoes are browned.
Step 4: Roast
Add grated cheese and fresh or dried herbs. Return to the oven and bake until the cheese melts.
Step 5: Add cheese
