1. Roast the garlic
Slice the garlic cloves and sauté in olive oil. Roast on low flame until browned.
(Sometimes when I roast garlic in the oven for roasted garlic sauce, I roast a big batch of garlic and freeze some to use for this sauce later. Saves some time and an extra pan to wash.)

2. Blend the garlic, oil and lemon juice
Once the garlic cools down, blend it along with the oil and lemon juice. You may not get a smooth mixture unless you have a small blender.
The solution is to add a couple of spoons of the yogurt and blend to get a smooth sauce.

3. Whip up with yogurt, salt and black pepper
Add the rest of the yogurt with salt and pepper and whisk until combined. Here’s your SILKY SMOOTH garlic yogurt sauce!

4. Garnish with dill
Chop up dill and mix in. I love dill because it gives a unique flavor to yogurt sauces like tzatziki. You can use other herbs like parsley and mint, too.
Sometimes I like to sprinkle some red pepper flakes or cumin if I’m in the mood for a spicy Greek yogurt sauce, like, to pair with a dish like chicken shawarma.
